Easy Penuche Icing (Mom's and Betty Crocker's)

- 1/2 cup butter
- 1 cup brown sugar (packed)
- 1/4 cup milk
- 1 3/4 to 2 cups sifted confectioners' sugar

Melt butter in saucepan.

Stir in brown sugar.

Boil and stir over low heat for two (2) minutes.

Stir in milk.

Bring to a boil, stirring constantly.

Cool to lukewarm (120 degrees).

Gradually stir in confectioners' sugar.

Place pan in ice water and stir until thick enough to spread.

Makes enough icing for two 8" or 9" layers or one 13" x 9" oblong cake.

We always use this with a yellow cake, but I bet it would taste great on a white vanilla cake.
